Two day course - Hand forged chef knife

The two day course is focused on the craft of the hand forged knife. Students make and take home a hand forged chef knife (180mm long blade) with a hidden tang, hardwood handle. The knife can shaped in either the versatile Japanese gyuto profile or the vegetable specific Japanese nakiri profile and the wide bevel grind retains the beautiful black textured surface created through the forging process.

Processes:

  • Hand forge: Work the steel red hot on anvils with hammers. The full first morning is dedicated to forging the blade and learning the techniques to accurately & cleanly forge to final dimensions and finished surfaces.

  • Profile: Grind the blade to shape on our knife maker’s 2 x 72” belt grinder.

  • Heat treat: Quench and temper high carbon steel using our digital kiln and Houghton’s quench oil for a sharp and durable edge.

  • Grind bevels: Carefully take the blade down to a fine edge ready for sharpening.

  • Handle work: Construction, glue up & shaping.

  • Sharpen: Key concepts of sharpening on Japanese water stones, putting a keen edge on your chef knife ready to take home.

  • Blade: 1084 high carbon steel.

  • Handle: Recycled timber, varies based on availability.

  • Cost: $890.00 p/person

  • Location: Kyneton - We are excited to be welcoming students to our new workshop at The Mill in Castlemaine at the end of 2025.

  • Time: 9.00am for a 9.15am start, through to about 4.00pm.

  • Course size: We have a maximum of three students per course which allows for a high level of tuition with two fellow enthusiast. A small group means every level of experience can be accommodated from complete beginner with zero tools experience through to someone who has already made a start in knife making and is wanting to further their experience and knowledge. Our course size also means friends, workmates or family can enjoy the day together and go home with handmade knives and a shared experience.

  • Minimum age: 16.

  • Cancellation policy: We don’t offer cancellations but we are very happy to swap dates if needed or transfer your deposit to another person.

  • Deposit: A 25% deposit is required upon booking and the remainder due upon receipt of final invoice two weeks before course commencement.

  • In the event that a high heat day falls on a course date, this course may need to be rescheduled.
