One day course - Hand forged kitchen knife

A great introduction to knife making. You will make and take home a hand forged kitchen knife (130mm long blade) with a full tang, black micarta handle and brass pins. The kitchen knife shape and size is perfect for when you don’t want to pick up a chef knife but need something bigger than a paring knife.

Processes:

The day starts in our workshop heating your knife in the forge, forging the blade out on the anvil and stamping your initials. You then heat treat the blade in our digital kiln, learning how to quench and temper high carbon steel for a sharp and durable edge. While the blade tempers we run through a sharpening intro, introducing the key concepts of sharpening on Japanese water stones. You then move onto grinding the blade bevels on our 2 x 72” belt grinder, carefully taking the blade down to a fine edge ready for sharpening before completing the handle glue up. After lunch you start work on your handle, shaping it to your preferences and we finish up the day back on the water stones, putting a keen edge on your kitchen knife ready to take home.

  • Cost: $490.00 p/person

  • Location: Kyneton - We are excited to be welcoming students to our new workshop at The Mill in Castlemaine at the end of 2025.

  • Time: 9.00am for a 9.15am start, through to about 5.00pm.

  • Course size: We have a maximum of three students per course which allows for a high level of tuition with two fellow enthusiast. A small group means every level of experience can be accommodated from complete beginner with zero tools experience through to someone who has already made a start in knife making and is wanting to further their experience and knowledge. Our course size also means friends, workmates or family can enjoy the day together and go home with handmade knives and a shared experience.

  • Minimum age: 16.

  • Cancellation policy: We don’t offer cancellations but we are very happy to swap dates if needed or transfer your deposit to another person.

  • Deposit: A 25% deposit is required upon booking and the remainder due upon receipt of final invoice two weeks before course commencement.

  • In the event that a high heat day falls on a course date, this course may need to be rescheduled.
